SPAM Warm Maple Apple Breakfast Bake

1 – 12 oz. can refrigerated flaky biscuit dough

1 can SPAM, chopped

2 cups apple, peeled, cored and chopped

1/4 cup raisins

1/2 cup brown sugar

1/2 teaspoon apple pie spice

1/3 cup plus 1 to 2 tablespoons maple syrup

1 egg

1/2 cup pecans, chopped

1/3 cup confectioners' sugar

  1. Preheat oven to 350 degrees. Generously grease or spray with non-stick cooking spray a 9-inch square baking dish or similar sized baking dish.
  2. Cut each biscuit into 4 equal pieces; set aside. Sprinkle 1/2 of the SPAM, 1 cup of the apples and all the raisins over the bottom of the prepared pan, spreading evenly. Arrange biscuit pieces, pointed ends up, over the mixture. Sprinkle evenly with remaining SPAM and apples.
  3. In a small mixing bowl, combine brown sugar, apple pie spice, 1/3 cup maple syrup and egg, blending thoroughly. Stir in nuts, then spoon evenly over biscuit pieces and SPAM-apple mixture.
  4. Bake in preheated oven for 35 to 45 minutes, or until nicely browned. Cool for 5 minutes, and then drizzle with maple glaze.
  5. To make maple glaze: In a small bowl whisk together the confectioners' sugar and 1 to 2 tablespoons of maple syrup until a drizzling consistency is reached.

Yields: 6 servings

  • Pat wonthe blue ribbon and a $150 cash award in theGreat American SPAM Championship held at theNebraska State Fair.
  • Pat was a first time entrant and didn't plan on entering the contest until the last minute. Her husband loves SPAM so she has always made a delicious breakfast bake that is now a blue ribbon winner. Pat was encouraged to enter the fair by her sister who enters at her local county fair in Idaho every year. When Pat isn't cooking or baking, she is biking or gardening. She is an administrative assistant and her husband, David is a postal carrier.
  • The first place winning recipes (adults and kids) are submitted for national judging. The recipes compete against 39 other 1st place winning recipes from state and county fairs around the country. Pat has the chance to win a trip to SPAM Jam Waikiki in Hawaii next April, a value of $3000. The SPAM Kid Chef has a chance for a $2000 grand prize.
  • Her SPAM Warm Maple Apple Breakfast Bake beat out about 37 other fantastic entries.
  • The judges were looking for the most easy, almost “effortless” main dishes that are sure-fire crowd pleasers.
  • Recipeswere judged for Taste (45%) Ease of Preparation (30%) and Presentation (25%).
  • The adult winners received $150, $50, and $25 for 1st – 3rd place.
