Bryan Health Chef shares locally sourced recipes at Sunday Farmers’ Market

For the next four Sundays, Bryan Health is partnering with the Sunday Farmer’s Market at college view to bring a delicious recipe made from locally sourced food for everyone to taste.

Nazim Khan, the executive chef at Bryan Health, made his first appearance at the market to share his knowledge.

“We did a great Brazilian steak sauce with all fresh herbs,” Khan says as he prepares the steak over a flaming grill. 

Along with being the Executive Chef of the Bryan Health system, Khan is also a winner of the United Fresh Produce Excellence in Food Service Award.

The award, which he won in 2016, is given to chefs and their companies for their innovative and influential use of fresh produce. And what better place to showcase his culinary intelligence with fresh foods than at a farmer’s market?

“Sunday is a community gathering and Bryan Health is a big supporter of our community so as a chef, what I can do for the community is to help others to learn how to eat fresh,” Khan says.

“I’m also a Nebraska Food Council Member, so I’m just trying to support my local farmers, local food, fresh eats, all the good ingredients out here that you can enjoy.”

Khan’s presence at the Farmers’ Market did not go unnoticed as lines of people were waiting to try the zucchini salad topped with fresh steak and his Brazilian steak sauce. He says they went through 300 servings in just under an hour.

Khan stresses that eating locally is also vital to our health. A big reason why he is doing the chef demonstration is to showcase how to use local ingredients in a tasty, healthy way.

“Everyone wants to live a long life, you want to stay healthy, and a big part of staying healthy is to eat good food, right food, whole grain, fresh produce, ingredients, salad. . . who likes to use dry spices? I don’t like any dry ingredients!” Khan says. 

Chef Khan is a Certified Executive Chef (CEC) through the American Culinary Federation and a World Certified Executive Chef (WCEC) through the World Chef Association.
