Former UNL professor, 85, remembered for his contribution to the McRib

LINCOLN, Neb. (KLKN) — A former University of Nebraska-Lincoln professor whose work led to the creation of the McDonald’s McRib sandwich died Friday at age 85.

Roger Mandigo started at UNL as a professor of meat science in 1966 and worked there for 45 years, according to his Roper & Sons Funeral home obituary, which was shared by the university.

His research led to many breakthroughs in meat manufacturing, processing and product development, the obituary said.

But he was best known for his work in restructured pork, which led to the development of the McRib.

Mandigo is survived by his wife, three children and six grandchildren.

His funeral will be held 11 a.m. Wednesday at First United Methodist Church in Waverly.
