Insomnia Cookies holds grand opening for its first location in Nebraska

LINCOLN, Neb. (KLKN) – Lincoln is now home to Nebraska’s one and only Insomnia Cookies.

The store is on Q Street, on the southern edge of the University of Nebraska-Lincoln campus.

At its grand opening Saturday night, there were games, music and a free cookie for everyone who stopped by.

The store has nine traditional flavors, six deluxe flavors, four vegan options and special limited-time flavors that change every month.

The store is open during the day but stays open until 1 a.m. from Sunday to Wednesday and 3 a.m. on Thursday, Friday and Saturday.

Store operations manager Charles McVicker said the idea is to provide cookies for anyone up late needing a snack.

“We really want to be that, like, late-night spot for everybody,” he said. “Our main thing here is warm cookies delivered. We’re really focusing on that late-night community and being part of the college as well.”

The company was started in 2003 by college students in Pennsylvania, and McVicker said it hopes to continue expanding.

He said 15% of the sales from the grand opening will be donated to the Food Bank of Lincoln.
