JuJu’s Vegan Cuisine in Lincoln goes mobile to expand reach across Nebraska

LINCOLN, Neb. (KLKN) – The push to expand food trucks across Lincoln continues to grow, and small businesses like JuJu’s Vegan Cajun and Creole Cuisine are following the trend.

Owner and head chef Derick Gaspard Jr. says closing his restaurant building after just four years is “bittersweet.”

“I like to do it for the passion of cooking and not feeling like I need to cook just to pay the bills,” he said.

Now, Gaspard’s moving completely into mobile food service to expand his reach across Nebraska.

He bought the truck after receiving a $25,000 grant while catering in 2019.

“That was my original goal and intention, to bring this food primarily to Black people,” Gaspard said. “Just to, you know, raise awareness.”

He said lower-income communities should have access to healthier food choices.

“We want to promote that in the community as well, so with the mobile option, that will allow us to,” Gaspard said.
