Birria Taco takeover despite O street construction

LINCOLN, Neb. (KLKN) – Construction for the O street project is well underway, making businesses on O street a bit harder to access.

Jordan Jackson, owner of Birria Boss, has found a way to create more options for guests.

The business known for its birria tacos is making their food more accessible to the patrons unwilling to deal with the barriers caused by construction.

“Sales have been consistently lower, unfortunately. We’re not necessarily profiting a ton,” said Jackson.

That’s when he came up with the idea to purchase a food trailer.

“I just figured getting that food truck and you know doing all that will help mitigate the losses essentially and then also at the same time help us build and grow,” he said.

Jackson started Birria Boss in 2019, from his home kitchen; making sales through word of mouth.

He opened the O street brick- and- mortar in 2023, where he currently whips up fan favorites.

“The top sellers would probably be probably tacos, the wings and maybe our quesadilla,” he said.

“My favorites would be the tacos the wings or the gorilla cheese sandwich, which is top tier.”

The restaurant’s success rapidly built a reputation for delicious food.

“I cannot say enough good things about the food,” said Angela Washington, a first-time customer.

When construction closed down the roads around his storefront, it affected the number of patrons that would visit the restaurant.

Jackson says sales dropped by 30%. That’s when he decided to purchase a food trailer and expand.

The idea would grow his business, but also his connection to the community.

“I love Lincoln to be honest. I can see myself buying a home here,” said Jackson.

“Turning losses into lessons, essentially.”

Jackson says the buzz of the truck is already helping attract new people.

That, along with the deals he offers to the city as well such as discounts for all first responders, teachers, and students.

He also offers a good deal on holidays like Juneteenth, which is what brought Washington into his store on Friday.

“I wanted to pour into my community,” she said.

“I had to be intentional of coming here, and so we knew that we would probably have to park a couple blocks away, but it’s really important to me to support local businesses and especially during times of construction like now.”

Jackson says he has a few more additions to put onto the truck, but then he’ll announce its locations on his Facebook.
