Let them make cake: Students take on food science challenge for UNL scholarship

LINCOLN, Neb. (KLKN) – High school students from Nebraska and other states took part in a food science challenge for a $5,000 scholarship on Friday at UNL’s Food Science and Technology building.

The challenge was to recreate a boxed cake mix using commercial food dyes and other ingredients.

After the students baked their cake, they went to a lab to analyze the color and texture and compared their cake to the boxed cake.

Professor Curtis Weller, head of the Food Science and Technology Department, hopes that events like this get more students interested in the field.

“It’s important for us to make students aware of that is very vital,” he said. “We all eat, and we all have an interest in foods that are available to us. There’s quite a bit of need for trained individuals.”

Each student who completed the tasks and project for the day received the scholarship, which they can only use if they go to UNL and join the food science department.
