JuJu’s Vegan Cajun and Creole: Serving up healthy Louisiana staples
Celebrating Black-Owned businesses in Lincoln for Black history month.
LINCOLN, Neb. (KLKN) – Derick Gaspard, a Louisiana native, is cooking up fresh, healthy, vegan cajun and creole options for the Lincoln Community. The restaurant is located at 11th and B street in the South of Downtown neighborhood.
Gaspard started the business as a catering company, but soon after he transitioned into a sit-down and takeout restaurant. He wanted to bring Louisiana culture and flavor to Lincoln, but with a vegan twist.
He said he was inspired to open his restaurant after going back and visiting his hometown and seeing all of the different vegan restaurants.
Gaspard explained he’s always been passionate about cooking. He joked saying, ” I used to watch the Food Network a lot, a lot of kids would watch the Cartoon Network.”
He grew up watching Emeril on TV and seeing a chef from his hometown inspired him to pursue the restaurant business.
JuJu’s makes all of their food by hand.
“You can expect multiple layers of flavor. We make everything fresh every week, everything is prepared fresh to order. So just expect an overall fresh, great experience. I always make the joke that men lie, women lie, but the flavor doesn’t,” said Gaspard.
Gaspard said he feels really reassured knowing there is support for him from the community, his family, and his hometown.
