Ranch Snow Pea & Cashew Salad

(Runner-Up, “Fresh Taste for the Family”, Nebraska State Fair)

1-1/2 cups fresh snow peas, halved

2 cups chopped cauliflower

1/2 cup chopped broccoli

1 cup chopped celery

1/4 cup chopped green onions

2 cups light sour cream

1 packet Hidden Valley Ranch Salad Dressing & Seasoning Mix

3 bacons strips, cooked and crumbled

1/2 cup chopped cashews

Leaf lettuce (optional)

In a large bowl, combine peas, cauliflower, broccoli, celery and onions. In a small bowl, mix sour cream and Hidden Valley Ranch seasoning mix. Pour mixture over vegetables and toss to coat. Serve in a lettuce-lined bowl if desired. Sprinkle with bacon and cashews.
